These Caturra, Catuai, Panainema and Catimore varietals are shade grown by the Aldea cooperative which has 20,000 small holders situated between 1100-1300 masl in the highlands of Jinotega region within the Café ECOFORESTAL program an agroforestry system that uses interplanting to improve revenue streams and enhance soil health.

The Poda group led by a community leader in Sidikalang to improve coffee quality and financial management. This lot contains the varietal Tim Tim grown at the height of 1200-1400 masl and once all the ripest cherries are picked, they go under a 24hr fermentation process and then goes through the wet hulled process.

The Kebele (community) Worka Chelbessa is located in De Gedeo. The batch here is one that contains such Organically grown Heirloom at an altitude of 1900-2200 masl and has gone through the Natural process.

Since 1961 the Cocatrel Cooperative has grown to 6000 members. This coffee which means "Nuts of Brazil" has come from the Carmo De Cachoeira area situated at 900 -1100 masl. The Yellow Catuai, Yellow Bourbon and Mundo Novo varietals go through a natural process using a static method to dry them before milling.
Ers 1961 mae Cooperative Cocatrel wedi tyfu i 6000 o aelodau. Mae'r coffi hwn sy'n golygu "Cnau Brasil" wedi dod o ardal Carmo De Cachoeira sydd wedi'i lleoli ar 900 -1100 mulm. Mae'r mathau Catuai Melyn, Bourbon Melyn a Mundo Novo yn mynd trwy broses naturiol gan ddefnyddio dull statig i'w sychu cyn eu malu.

This blend is a combination of coffee from the Uganda from 1800-2200 masl and Rwanda from 1400-1600 masl with the vareitals, SL14, SL28, Nayasaland and Red Bourbon and processed through the washed process. Lala Salama tena is Swahili for sleep well again.
